I would like to set up an order form for someone who does not have an email. Is there a way to code it to send as a fax to her fax machine instead?

There are a number of companies that offer email to fax conversion. The emails go to their site nearest the destination and is then sent as a fax from there. They will charge you based on the number of faxes and the distance they are sent so you will want to choose one that has offices near to whereever the faxes are to go to.
